Einkorn contains more protein, vitamins (especially B vitamins), and minerals like iron and magnesium than modern wheat varieties. It is also a great source of antioxidants, which help combat oxidative stress in the body.
Einkorn contains high amounts of essential omega-3 fatty acids, particularly alpha-linolenic acid (ALA), which supports heart health and helps reduce inflammation in the body. Rich in antioxidants including lutein and carotenoids.
The grain has a lower glycemic index compared to modern wheat, meaning it has a slower impact on blood sugar levels.
Einkorn has a simpler, more easily digestible gluten structure compared to modern wheat. While it still contains gluten, some people with mild sensitivities may find it more tolerable.
