It contains higher levels of protein (13g/100g), fibre (8.1g/100g), vitamins (like B vitamins), and minerals (such as magnesium and iron), making it a healthier choice for those looking to boost their nutrient intake. With a low glycemic index, it is a better choice than modern flour for maintaining blood sugar levels.
Whilst it is not gluten-free, its gluten structure is less complex and can be more tolerable for individuals with mild sensitivities to gluten.
